Dr. Deborah Bujnowski, a nutritional epidemiologist, has joined the Department of Agriculture, Nutrition and Veterinary Science.
Bujnowski earned her bachelor's degree in dietetics at the University of Illinois at Urbana-Champaign, her master's in public health at Tulane University and her Ph.D in public health studies with a concentration in behavioral science and health education from St. Louis University. She was a research fellow in nutritional/cardiovascular epidemiology at the University of North Carolina Gillings School of Global Public Health.
While earning her Ph.D, Bujnowski worked at the Obesity Prevention Center at St. Louis, where she was involved in a program to promote nutrition and physical activity in postpartum adolescents. Prior to that she worked as a dietitian, research coordinator and epidemiologist in hypertension research.
As a nutritional epidemiologist, Bujnowski examines the nutritional predictors of diseases and outcomes in certain population groups. Her specific interests are obesity and cardiovascular disease.
One study she was involved in at North Carolina investigated whether dietary folate intake was associated with the incidence of hypertension in a group of 4,400 men and women aged 18 to 30. The study concluded that higher folate intake in young adulthood was longitudinally associated with a lower incidence of hypertension later in life.
Bujnowski enjoys cooking, travel and yoga.
